DIRECTIONS
Prepare your game hens, some
like to stuff with a nice fruit & rice stuffing, I prefer the old
fashioned traditional stuffing used in my Christmas Turkey, and bake in
oven at 350F. If your hens are big enough to take 2 hours, then cook for 1 hour then baste every 10 minutes for 1 hour. If cooking time is 1 1\2 hours, then you cook for the 1/2 hour, then baste every 10 minutes for 1 hour. Warm in sauce pan, until hot, and baste every 10 minutes while cooking the last hour. Birds are done when meat is not pink near breast bone, but the outside will be beautifully glazed. I use orange juice instead of water to cook a lot of meat, the flavour of your meat is more intense. |
